Filled Pitta - Red Pepper Houmus & Veggies

I love pitta bread, either filled, or simply toasted, then cut into strips to eat with houmus.
I often make filled pittas for lunch & you can really fill with your favourite foods.
I like to toast my pitta for a couple of minutes in the toaster, then fill with some of my favourite veggies. The one I've made here is high in protein, without adding any meat.
Filled Pitta Ingredients (for 1 pitta):
Pitta bread - white or wholemeal
Red pepper houmus - option to choose low-fat
1/3 tin of chickpeas
Handful of washed rocket
4-5 chopped mushrooms
3-4 chopped cherry tomatoes
Filled Pitta Instructions:
-Lightly toast the pitta - a couple of minutes in the toaster is usually enough
-Heat the chickpeas on the hob or microwave (I like to mash them when warm)
-Cut the edge off the long side of the pitta, to create the opening
-Spread a layer of the red pepper houmus on the inside
-Add the chickpeas, chopped mushrooms, tomatoes & rocket
-Enjoy

High in protein (approx 13-14grams).
Carbs for energy.
Low in fat.
High in amino acids, antioxidants & vitamins C, E, B & K.
PS - Though I am qualified in nutrition, I don't work out exact nutritional details, or count calories etc. I just eat healthy & know the food sources, nutrients & vitamins I need to stay healthy AND fuel my body.
