Strawberry or Cherry & Apricot Granola Pots

I always start my morning with a coffee (especially in winter), or a lemon and ginger tea. I don't eat straight away, but I do always have breakfast. I love overnight oats or granola pots and they definitely save me time in a morning!


I use Alpro soy yoghurt (cherry or strawberry are my faves), you can choose any you like: natural, Greek or flavoured. I like to use sealable glass jars, I've had mine a while, but found these similar ones from B & Ms: Glass Storage Jar and I make up 2/3 pots at a time.


Strawberry/Cherry & Apricot Granola Pot Ingredients:

Strawberry granola - this just has added dried strawberry pieces, you can use any

Soy yoghurt

Dried apricots to top OR fresh/tinned apricots (in juice not syrup)

Chi seeds (optional)


Strawberry/Cherry & Apricot Granola Pot Instructions:

1/3 of the pot filled with granola

1/3 of the pot filled with yoghurt - if using fresh or tinned apricots. Use more yogurt if using dried apricot pieces

Top with apricots

Sprinkle with chi seeds (optional)

Pop in the fridge and voila!


Nutritional Info

High in protein (amounts depend on the type of yoghurt used).

Carbs for energy and calcium for bones.

Low in fat.


PS - I don't work out exact nutritional details, or count calories etc. I just eat healthy and know the food sources, nutrients and vitamins I need to stay healthy AND fuel my body.
